一直致力于植物多酚的研究,研究方向稳定。围绕与植物多酚相关的农产品的采后加工难点,以富含多酚的柿子、茶等为对象,重点针对其加工与高值利用过程中关键性技术难点所涉及的化学结构、活性变化及机制等展开深入研究。主要研究方向有:1.植物多酚提取分离新技术,结构分析,健康调节作用及其分子机制。2. 特色果蔬以及林果的褐变控制以及精深加工及其高值高效利用新技术研究。3. 植物多酚通过与食品成分互作抑制加工过程中有毒有害产物如杂环胺、丙烯酰胺、晚期糖基化产物等形成的作用及机制。
